When I hover over a menu entry to see its sub-items, it's very hard to move the mouse to the sub-items. Most of the time, the flyout closes, before I can get the mouse over any sub-item. Any suggestions?

About your problem, I do not understand what problem you are having but when I hover into the menu, I can still go to the submenu

Everything works well, the effect is still enough time so you can go to the submenu because no customer has problems with the effect too fast.
or I don't understand, You can describe the problem in more detail or send me one image of the problem

Ok, when I hover the mouse over a main entry like 'Info', the child items fade in. However, when I now move the mouse from 'Info' to 'Disclaimer' -for example- I have to be very quick or the child items will fade out nearly instantly. Is there any way to let the menu wait a short time before it closes?

I checked and found your style templates conflicting with my product
Please go to back-end modules -> tab Advanced -> custom css and add code:

.rt-menu::after {
height: 0px!important;
}
.rt-menu{
border-bottom: 3px solid #262a2e;
}
