style changes on top of the defaults

In the template Galiana there are 5 preset template styles (black, blue, coffee, cyan, and green).
Where can I ammend 1 of these to have a different menu color (including a different color for sublevel and selected/hover over).

On top of the above, where can I ammend the default background color?
